Firmer and more substantial than regular chye sim — the stems are thick and juicy with a satisfying crunch, the leaves dark and slightly waxy. How to Use:

  • 🍜 Wonton noodles — The non-negotiable accompaniment to a proper bowl of Hong Kong-style wonton noodles. Blanched briefly and laid alongside — its slight bitterness cuts through the rich prawn-pork broth perfectly.
  • 🥩 Oyster sauce & wok hei — Blanch or stir fry quickly, then drown in a hot oyster sauce with a drizzle of sesame oil and scattered fried shallots. A Cantonese institution that never gets old.
  • 🔥 Wok-charred with garlic — Toss through a screaming hot wok with plenty of garlic until the edges catch and char slightly. The bitterness caramelises into something deeply savoury and smoky.
  • 🥘 Steamed fish companion — Lay under or alongside steamed fish to catch the ginger-soy dressing — it absorbs the aromatic juices and becomes arguably better than the fish itself.

 

 

Pro tip: The flower buds are the sweetest part — don't discard them. Split thicker stems lengthways before cooking to ensure they cook through at the same rate as the leaves, and always serve immediately while the colour is at its most vivid.

Storage: Refrigerate loosely in a paper bag and use within 4–5 days. The flower buds open and yellow quickly once past their prime — a reliable freshness indicator. Cook sooner if you notice the buds beginning to open.
