Chinese Leek (Red) - 红葱

500 g

Flavour & Texture: Bold, garlicky, and intensely aromatic — far more pungent than Western chives with a deep, savoury edge that's closer to garlic than onion. The red-rooted variety carries a slightly stronger, more complex flavour than green Chinese chives with a subtle sweetness underneath the punch.

How to Use:

  • 🥟 Dumpling & bao filling — The classic pairing with pork mince, glass noodles, or egg. Chop finely and mix into your filling for that unmistakable savoury depth that makes a good dumpling great.
  • 🍳 Chive egg stir fry — Cut into short lengths and toss with beaten egg in a screaming hot wok. One of the great simple dishes — done in under 3 minutes, better than it has any right to be.
  • 🍜 Noodle garnish — Scatter over dry wonton noodles, beef noodle soup, or ban mian just before serving for a sharp, fragrant hit that cuts through rich broths beautifully.
  • 🥘 Seafood stir fry — Pair with prawns, squid, or clams in a quick wok toss with garlic and a splash of fish sauce — the affinity with seafood is unmatched.

Pro tip:
Add Chinese leeks at the very end of cooking — 30 to 60 seconds is all they need. Overcook them and the sharp, garlicky fragrance you paid for disappears entirely into bitterness.

Storage: Highly perishable — wrap in a dry paper towel, place in a bag, and refrigerate. Use within 3–4 days. Any yellowing or sliminess at the tips means they're past their best.
